In 2018, EUROGERM launched its « NutriA morning goods », the first chocolate chip brioche roll reformulated to be able to display a Nutri-Score A. A magnificent achievement since most products of this type at the time had a nutritional equivalent of a Nutri-Score D. Since then, our expertise in this domain has grown to take in other spectacular developments: the NutriA muffin, The Nutri(B) doughnut and other reformulation challenges.

The Nutri-Score display is nowadays becoming increasingly popular, and 8 out of 10 French people confirm they have seen this logo (RelevanC for CasinoMax- February 2020). What is more, an increasing number of European countries are joining this display system (to date optional) that is both very easy to read and simple for the consumer, the objective clearly being to increase the range with the best Nutri-Score results (France, Belgium, Luxembourg, Switzerland, Spain, Netherlands, Germany). So widespread, that the European Commission is looking into an obligatory display policy….

A lot of effort has gone into reformulations by the major plant bakeries within our baked goods sector in order to improve the nutritional quality of their products and major national brands and multiple retailers have already adopted the Nutri-Score as way to indicate nutritional value. It is gaining ground and there is increased interest for the consumer who uses it to compare products.

Morning goods and cake products are rich products and their recipes can be overhauled, but not without numerous tests and endorsements covering texture and acceptability, as even without going as far as a Nutri-Score A, it can be interesting to improve the nutritional composition. Breads indeed can combine Indulgence & Health by optimising their nutritional composition, with specific ingredients which make it possible to get nutritional claims.

There are several reformulation options offered to producers and we support them in this process thanks to our design and sensory evaluation laboratories where the recipes and formulations can be measured and adjusted. 

With this vision in mind, EUROGERM and the ARPEGES Centre of Expertise is organising next 17th December a Webinar on the subject: NUTRITIONAL OPTIMISATION OF BAKERY PRODUCTS: EUROGERM’S approach as regards the NUTRI-SCORE system.
